Wheat-free Waffles

A friend asked me to make wheat-free waffles this morning.  I have mixed success with wheat-free stuff, but thought I’d give it a go.  These came out awesome!  They are at least as good as normal waffles, so everyone might want to try them — not just those who can’t tolerate wheat.

1 egg yolk
3/4 cup milk
2 Tbsp oil
1 tsp vanilla
1/2 cup wheat free flour (I used Dove’s wheat-free bread flour)
1/4 cup cornflour (cornstarch to the Americans)
1/3 cup almond flour/finely ground almonds
1 and 1/2 tsp baking powder
1/4 tsp salt
1 egg white, stiffly beaten

Separate the egg and place the yolk in a large bowl.  Beat the egg white until stiff; set aside. Add the other ingredients to the egg yolk and mix to combine (it will start quite lumpy).  Fold in the egg white.  Cook in a heated waffle iron.  I find using non-stick cooking spray helps!

This makes about 3 small-ish waffles.  The recipe would be easy to double.
