Recipe: Simes’ Mum’s Vegan Nut Roast

  • 1 x Medium sized onion
  • 1oz butter / marge / vegan spread
  • 8oz mixed nuts
  • 4oz wholemeal bread
  • 1/2pt vegetable stock or water
    (or BEST IDEA 1/4 pt stock and 1/4pt red wine)
  • 2tsp yeast extract
  • Salt & pepper to taste


  1. Chop the onions and saute in the butter / butter substitute until transparent
  2. Grind the nuts & bread together until fine
  3. Heat stock & yeast extract to boiling point, then combine all ingredients together & mix well. It should be fairly slack
  4. Turn into a greased shallow baking dish, level the surface & sprinkle with breadcrumbs
  5. Bake at 180C / 350F / GM4 for 30 mins – until golden brown
  6. Nom.
