Irish Soda Bread

Matt requested the Irish Soda Bread recipe, so here it is:

Irish soda bread
4 cups flour
1 tsp salt
1Tbsp baking powder
1 tsp bicarb (baking soda)
1/4 cup sugar
1/4 cup butter (cold)
1 egg
1 3/4 cups buttermilk*
2 cups of raisins**
*Don’t have buttermilk? You can substitute 1 cup sour cream and 3/4 cup milk, adding in 1 tsp. vinegar.
**Don’t like raisins?  Leave them out and add 1/4 tsp cardamom instead.
Combine the dry ingredients in a bowl, and cut in the butter (as if you were making pastry or crumble topping).  Add the raisins to the dry mix.  Combine the wet ingredients in a basin or bowl, and add to the flour mix.  Mix to combine.  Turn out on a floured surface and knead lightly, just until it comes together (about 1 minute).  Divide into two loaves and shape them into rounds.  Score the top of each in a cross shape.  Bake at 180C for 25–30 minutes (slightly less if using a fan oven). They should be brown and sound hollow when tapped.
(Hint: take off rings before kneading!)
